               True Vegan Soup with Hailey

​​No Other Spices Needed

Prep time: 10 min. Cooking time: 45 min. Serves: 8 people


½ cup of Hailey Torshi Salsa
2 tablespoons of good oil/or olive oil
1 cup of diced carrots
1 cup of diced bell pepper
1 cup of mushrooms
1 cup of broccoli
1 tablespoon salt
1/2 cup of rice
1 can of 28oz or close to, diced tomatoes
1 can of 8oz tomato Sauce
6 cups of water


Wash and rinse the rice a couple of times until the water is clear, drain and set aside.
Put the Hailey Torshi Salsa, rice, carrots and oil in a medium size pan and sauté for about 2 to 3 min. Add the rest of the vegetables and salt and sauté for another 2 to 3 min. Add the water and bring to a boil, then add the tomato sauce and the diced tomatoes to the pot and bring to a boil. Turn heat to low and simmer for about 40 min. or until the carrots are done! Stir occasionally. Remove from heat and serve. Hope you enjoy the most delicious All Vegan soup Ever! If less heat/ or zest is desired, add more water and a little salt to adjust the heat!
For those who like it creamy, you can add a little Half & Half and simmer for one min.
Can be served with crackers or your choice of bread!
